Can someone shed some insight as to what happens to the data and folder structure when a module is deleted? Thanks,

Sure, the folder the module is in gets deleted, along with it's assemblies, if the module provided a sql script for uninstallation, this is also run (this may clean up any date and tables, but is dependant on the module implementing it)
